Yellow Squash Boats; sail away to squash heaven. Or something like that. It has squash, cheese, crackers, and onions, a great combination for a great side dish. And it is pretty simple too. Carve your boats, mix your filling, toss it all together in the oven, and you have a healthy and delicious side dish in around half an hour.
Ingredients
- 4-6 yellow squashes
- 1 small onion diced
- 4-6 crushed crackers (I used Ritz)
- 1 tablespoon of butter
- 1/4-1/2 cup of cheese
Directions
- Boil some water in a large pot and toss the squash in for 7-10 minutes. Pre-heat the oven to around 350 degrees while they boil.
- Take the squash out, let it dry off and cool down.
- Once cooled slice in half (long ways) and gently scoop out the inside and place in a bowl.
- Heat up a medium sized pan on the stove with medium/high heat. Drop in the butter and onions and cook until the onions soften.
- While you do this put the squash shells on a pan and bake for 5-7 minutes to slightly harden the shells.
- Mix in the squash and crackers and cook for 1 minute, then take the pan off of the burner.
- Scoop out the fillings back in to the shells, Slap some cheese on top (enough to cover the fillings) and place back in the oven for 15-20 minutes.
- Enjoy.
